Parcelle Wine Studio as a platform, as an experience is a manifestation of my many years in the hospitality world. My initial dream was to be a French Teacher first, save my money and open some sort of cafe, photo gallery, eatery where all my passions can be exercised in one space, or many!
Many years later, the path as you may see it, has been a brand focused on wine, wine travel and Christopher Sealy, a sommelier/educator in a fine dining restaurant called Alo in Toronto.
When in reality it has been preparation for this fluid and nimble platform called Parcelle Wine Studio.
Parcelle is about creating experiences, a space in time where we come together, exactly as we want to be and have a moment together. It is not about being the best, it is about a moment that feels elevated, that leaves us restored. Parcelle - can be compared to that special desired ‘plot’ of land, or those special few rows in the vineyard, sitting in such sun and such soil the fruit, these grapes produce a wine so notably nuanced and different that it has its own singular bottling. A Parcel is like a gift. To taste it you remark it, you carry that memory into the next vintage or the next Parcelle engagement, it will be similar yet a different moment as nature intended.
To share this moment with a friend or lover, or in a communal setting will generate a resonant frequency that is unlike most others. It is restoration, it is a Christopher Sealy version of hospitality!
